The local mechanic says he can put a 1100hp v8 engine in the 300zx for $25000, sounds good 6 months later most of the engine is in and get a bill for $10000, 2 years later cars not even got a LVV but has a warrant and get a bill for another 62000 ............. WTF

Now what can you do about it?

Nothing was on paper but we agreed on 25K been the limit.

Also what happened in the 2 year gap between the 10k and 62k bills?

If you do not have the quote / contract in writing you have opened yourself up to being liable for any and all expenses including "unforeseen"/additional labour and charges that they can factor to accomplish the basic agreement of simply undertaking a v8 conversion for a car that was not designed for it. Whilst verbal is law abiding with an agreed value it is near impossible to dispute as he said she said. Any work carried out in that amount should have a written quote, all parts supplied/fitted/labour should be tallied.
How do they even get it to a tally of $62000 to do so? That is beyond ridiculous and so I fear this sounds intentional. (I've heard a similar story before -but for an RX-7 with V8 conversion job that didn't pan out with written contract in place - Fair go even did a piece on it a few years ago)
Be careful its likely you are getting taken to the point where they hope (or rather force) you to default and they will be lawfully able to sell your car to recover these mystical costs.

I would start by getting good legal advice, sometimes a well written letter implying legal proceedings and court costs etc can be enough to for the other party to see sense, espeacially if it is going to cost them time and money
As the comments above at least ask for a fully itemized bill

As greensheep has said if you've got the recording of the verbal agreement at the set price you need to go to a lawyer and see what he or she says.

Probably a lot better than a bunch of random people on the Internet's opinions :)

Email TradeMe telling them the engine is stolen. Then call the cops.

These people need a lesson. Swing hard now.
