have been wanting to get an adjustable coilover kit for the 240 for a while now and have done a little research on these. wanting to know if anyone has fitted these to there car?
or is there any other options more readily available within NZ.

First you want to confirm if the weld on parts are for the 240z 51mm tubes or the late 260z 55mm tubes - then if you have a 240z better to source the 260z version if that is required then do the conversion on those and then swap over = your car stays on the road while you get the weld on legs done etc.
Ok looks like they do both

This kit is weld on kit - if you see the image you have posted is just a sample. What you do is cut the stock strut tube down to the given length. The kit includes some weld on sleeves that now slide onto what is left of the strut these threaded sleeves are then plug welded (cert engineers want them plug welded) to the strut. Then the whole shock is a threaded item and is screwed down into these new sleeves on the lower part of your strut.
To help you understand there is a kit Arizona Z Car sell they are the same type of setup.

However in the above they show welding the sleeves on the front to the cast bit of the strut - that is not approved here in NZ - you have to plug weld.
