But at 75 k it sounds cheap
I came across a nismo skyline in the Newmarket Nissan show room
Price was $300k
Could not get near it to leave my finger prints on it :(

With no engine and no front suspension it should be pretty light
A tow trucks should be able to chain it , lift and tow it
Or go with old pallets and a pallet trolley on to a car trailer

I would start by getting good legal advice, sometimes a well written letter implying legal proceedings and court costs etc can be enough to for the other party to see sense, espeacially if it is going to cost them time and money
As the comments above at least ask for a fully itemized bill

Can be difficult to gauge, a good running car would be around the $30k mark
Based on your discription they could be worth 15 or 20k each
I am assuming that they are both NZ new cars and not imports from the US eg left hand drive
